L’Ones infused grappa

Company and Products

L’Ones is an artisanal distillery located in Panchià, in the Trentino region of northern Italy. It produces traditional grappas and natural infusions using Trentino grappa as base, flavored with wild herbs and botanicals harvested by hand in the woods of Val di Fiemme. The company avoids artificial colors or aromas and limits its production to comparatively small batches in order to maintain care over every stage of the process.

Its product line includes grappas and infused spirits such as Grappa al Cirmolo & Mugo (pine and mountain pine), Grappa al Cumino Montano, Grappa alla Genziana, Grappa al Lupino Tostato di Anterivo, Grappa al Mirtillo Nero Spontaneo, Grappa alla Rosa Canina, and others. The botanicals impart characteristic alpine aromas and flavors, making each bottle distinct.

The Workshop (Laboratory) & Guided Experience

The craft workshop is housed in a converted old barn in the historic center of Panchià. Visitors to the laboratory can observe the production process from raw botanicals through maceration, infusion, distillation, filtering, and bottling. The founder, Massimo Donei, oversees the revival and innovation of these natural infusions, combining regional tradition with sensitivity to local ecology.

Tours are organized so guests can smell and taste raw botanicals and finished spirits, learn about the selection of herbs, legal approvals (such as permissions from the Provincia Autonoma of Trento), and the dedication to small-batch production without shortcuts.
